Wings of Fire

(untested but advertised to be HOT)

Serves: 4

2 lbs chicken wings
1 onion diced
3 chipotle chiles
2 serrano chiles
1 tbsp olive oil
2 cups water
1/4 tsp cayenne chile pepper
1/3 cup ketchup
2 tbsp white vinegar
2 tbsp brown sugar
1 tsp dry mustard
1 tsp Worcestershire sauce
salt & pepper to taste

Break the wings at the joints and discard the tips. Wash and dry. Place in one layer in a glass dish.

Cover the chiles in warm water and let them steep for 15 minutes, or until softened. Remove the stems and seeds and dice.

In a sauce pan, sauté the onion in the oil until firm but not brown. Add teh remaining ingredients, bring to a boil, reduce the heat and simmer for about 30 minutes, or until the sauce becomes slightly thick. Remove from the heat and let the sauce stand for 5 minutes.  Put it in a food processor or blender and puree until smooth.

Pour the sauce over the wings and marinate eight hours. Remove the wings from the marinade and grill them for 10 minutes, turning often, Baste the wings with the sauce and cook another 5-10 minutes, turning and adding more baste as needed.
